Okay,
So I replaced the battery in one of the 3G iPods I'm fixing and all went well. However, it seems that it still won't hold a charge. I plug it in and it recognizes that an adapter has been attached but it doesn't charge or show that its charging. Could this be a logic board issue?

Check connections and also maybe try another cable.
