I made a site just for personal use (the gate.com offer at getrewardz) and I relized that I could do a WHOIS on the site and I can see my info... my address, #, name stuff like that. Is it legal for me to change it? Can I hide this? ANYONE can see this can't they? I don't want my address and # and stuff up for anyone to see.

No one will honestly want to look at your information, but you can also use proxy domains.

legally, you can't change it. The only way you can hide it is to make it a private registeration by changing to proxy server.

This is true of any domain. ICANN regulations require valid contact info on every domain. However you can have a private proxy for your contact info. With GoDaddy domains, this costs a couple bucks extra per year. 1&1 offers it free with domain registrations.
