I keep seeing people talk about switching to the HPod, but I have no idea how to do this. I already placed my order for an Apple iPod and it's still processing.

Next time you have a question on something that seems to be heavily discussed, try using the search feature, because this has been answered many times.
But anyways...
Go to your order history page, then click on your order number to pull up the details. Lower down, between Order # information, and Order Details, you'll see a button for switch to HP iPod.
If it isn't there, wait until your order is Sent to Vendor, Waiting for Product.
