Can you switch if your order is already "sent to vendor?"

You probably can, I know that you could switch to the Hp one during the "Sent To Vendor" stage.

You can swith it to the HPod, not like from a Mini to a normal Ipod or vice-versa. To switch, go to your account, head into orders, click on the order and there should be a button to change your order for an HPod
