Now that a bunch of us are finally starting to get our iPods shipped (no offense to those still waiting), i'm starting to rip my CD's.

Which format do you think I should rip my audio tracks to for a balance of good, full sound, with good file compression? mp3 or AAC?

If you plan to just play them on your iPod, then AAC. Bit-for-bit, it's superior to MP3.

However, MP3 opens your files up to a wider variety of players, and a wider variety of ripping/encoding options, such as VBR.

If you want to keep the bitrates low, AAC is the way to go. You can also help save the battery with less loading.

AAC is by far superior.

The only advantage Mp3 has is portability... it plays on everything.

AAC is the way to go.
If you have a lot of MP3's, convert them and then save the originals on a CD in case you want to make an MP3 disc or something.
If you're importing your CD collection, do it AAC. The files are smaller and you getter better sound at a lower bitrate.
MP3 is NOT the file format to use.

liDon'tli bother converting Mp3 to AAC.... you will only loose quality.

You can't regain what's already lost. You can only loose.

Instead, rip from the sources as AAC, or download AAC (iTunes music store!)

You can convert any format to any format. If not directly, than with WAV as a conduit. But you don't want to convert lossy formats to lossy formats. It's the same as making a photocopy of a photocopy. It's quality will degrade with each lossy step.

If you want to do format conversions, try dBPowerAmp.
